Risotto can be time consuming, but not this one.
You need: 185ml water, 25 grams parmesan, 1 tsp oil per person and any veg/fish/meat/cheese you wish to add
Fry the mixture for two minutes, add the water and stir while bringing to the boil. Simmer, covered, for 20 minutes, stir in the parmesan and it’s ready to eat. If you are adding raw meat/fish/veg add at the beginning otherwise unless it doesn’t need cooking, in which case add nearer the end so that it has time to warm through.
Pimp it up:
– leftovers can be used to make arancini balls
– add some white wine or stock in place of the water
– grate in lemon zest for a zingy flavour
